Adding a few nutrient boosting ingredients to everyday food is one of the easiest ways to improve your overall diet. Greek salad is something I have a couple times a week (at least) so I'm always looking for new ways to "kick it up a notch". I have been reading a lot about the health benefits of eating sprouted greens and seeds, so I decided to give them a try and oh boy, are they yummy! I've been adding them to everything lately.
For a quick Greek salad, that I tossed together on my lunch break, I just used a few simple ingredients that packed a big punch! In a large bowl, I mixed together a hand full of mixed greens, half a cucumber (chopped), one tomato (chopped), 1/2 cup sunflower greens and 1/2 cup sprouted nuts. And of course, Greek dressing from another one of my yummy recipes. After I finished my lunch, I was satisfied, full of energy and ready to tackle the rest of my busy day.
Sunflower greens and sprouted nuts are packed full of nutrients and protein. They are an amazing source of Vitamin A, B, C & E plus a good source of calcium, iron, magnesium, niacin, phosphorus, potassium and amino acids. They're like a delicious muti-vitamins you can add to all your meals! When food is in the spouting stage it is easier for the body to digest and absorb all the nutrients - so sprout on!
